2. on a seperate piece of paper write the title, the date
produced, the people who helped you produce this
work, and the key (if music).
3. put in envelope.
4. Mail it to yourself REGISTERED MAIL. (it will have to be signed for and it has a govt. date stamp).
5. MOST IMPORTANTLY DON'T OPEN IT!!!!!!

Well you can try using TwelveKeys, it'll take a file that you've recorded to PC (wav format is the best) and it'll display the notes aligned with a keyboard. It's basically a transcription assistant, so you would still need to create the sheet music. Otherwise you're looking at an extremely expensive software app to do exactly what you want to do.

Copyrights (and Trademarks which is where logos normally fall) generally only protect you if you're willing to enforce it. You can put the copyright or trademark (the superscript logo) on anything you produce. Registering with the feds gives you documentation–proving who did what first–but no further protection. It's still your responsibility to protect your own work.
So, if someone uses your designs, the first order of business is to write a cease and desist letter. Second would be to hire an attorney to write them to cease and desist. Last is a lawsuit, and you may want to seek damages. At this point, you need to prove you did it first.
If you don't enforce your own work, then you may lose your copyright or trademark. I believe this is what happened with Kleenex.
You also need to be aware that if you protect something, you can theoretically be in violation of your own copyright/trademark if you use the general design in something else. This has also happened to artists, and companies take great pains to ensure they aren't damaging or violating current copyright/trademark.
There are other ways to prove you did something first. One suggestion is to send yourself the design registered mail (possibly FedEx or UPS may work too), so there is a date stamp. Keep the envelope sealed in case you need to go to court. This is a good technique to date written work. Another way is to take the work to a notary, and this is my preferred way of dating designs.
If you go the fed route, it will cost you a lot (around $1k), and you'll probably need a lawyer. I believe a trademark is about 5 years, then you need to renew, and it will cost you hundreds more (don't hold me to the time and prices, it's been a while since I registered a trademark). Afterward you can use the registered copyright and trademark superscripts when displaying. You still are responsible for enforcing your designs. Obviously, if this is for someone else, it's their responsibility on how they want to protect it.
I don't register my work anymore, if I have something worthy of protection, I use the mail or notary route.
