I'm not 100 percent certain on how to do everything, but first thing you'd have to do is probably talk to someone with your Student Association. They'd be able to point you in the right direction as of how to actually form as an official university club. You may also need a teach who supports the idea, unsure as regulations will vary through university. You may also need to prove there is number of people interested in such a club, so it is a good idea to have an outlined idea of what kind of stuff you want to do , how often you want to meet, ect ect…
As for activities it depends what type of music club your talking about. If you mean like a concert band type of deal , then maybe break people off into groups and see if they can learn some duets/trios/quintets or see if you can even work towards playing a local festival. Many cities have novice categorys and it provides the players with professional feedback.
If your simply talking about a club where people discuss various bands and music , you could look at organizing groups wanting to see different concerts…Erm, talks about your favorite artists, share some not to mainstream bands and suggest favorite songs, help decipher lyric meanings? haha , it really depends what you meant.
