Just get a ps2-compatible flight-stick then, one that will be recognized as giving the same input as a dualshock 2. That's the only way to be sure it will work unless it was made for Ace Combat 5.
Having played Ace Combat 5, and still go back and play again occasionally, I would advise against using a flightstick though. The dualsticks with the ps2 controller is more effective, because you are able to look around in other directions, which is important so you don't crash into your wingmen. The dogfights are also yaw-intensive, if you get a stick you'd also need a rudder to do as well with yaw as the l2 and r2 buttons are.
It's also not a simulator, there is no realistic flight model requiring a high-tech flightstick. It's an arcade game, very well done but really not realistic. Great fun though.
I fell in love with this band after Scott Pilgrim.
…and Persona 3 could take even longer, depending on how willing I am to put up with the turn based combat.
